This delicious create-your-own grain bowl simplifies the family meal. If the quinoa is made ahead of time (read: leftovers) prep is just a bit of quick chopping. Foodies and choosy eater unite!
Assemble all the ingredients separately, even the dressing (which makes a fun dip for the kiddos). Start with a base of quinoa, and then add any or all of the mix-ins to match your appetite. While the more mature palate will appreciate how well bitter radicchio plays with ripe peaches and creamy avocado, younger eaters are free to stick with familiar fruit and nuts. There’s no wrong way to do it.
Family dinner is solved.
Ingredients
Create-your-own meals allow everyone to pile on their faves, so amounts are approximate.
Grain Bowl
- 3 cups cooked quinoa
- ¼ head radicchio, leaves torn
- 3 large peaches, firm-ripe, cut into chunks
- 1 avocado, cut into chunks
- ¼ cup slivered almonds
Lemon Honey Dressing
- Juice of 1 lemon (3 to 5 tablespoons to taste)
- 2 teaspoons honey
- ¼ cup extra virgin olive oil
- Salt and pepper to taste

Grain Bowl
Assemble each bowl individually. Add ¾ cup of quinoa to each bowl. Fold in desired amounts of the mix-ins, and top with Lemon Honey Dressing (below).
Lemon Honey Dressing
Whisk together lemon juice and honey in a small bowl. Slowly add olive oil, whisking constantly, to form an emulsion. Add salt and pepper to taste.

This looks good, except I don’t like avocados. Is there something I can substitute?
The beauty of this create-your-own meal is that you can leave out the mix-ins you’re not crazy about and load up on your faves!
