Cashew Butter Recipe

This cashew butter recipe is so easy, you'll blend up homemade cashew butter in a matter of minutes. No added sugar, and salt and oil are optional.

Ingredients

  • 2 cups cashew pieces
  • teaspoon salt, plus more to taste
  • 2 teaspoons avocado oil, optional

Directions

  • Preheat oven to 325°F. Spread the cashew nuts in an even layer on a rimmed baking sheet. Bake for 10 minutes, then stir. Return nuts to the oven and bake for an additional 5 to 10 minutes, until golden and toasted.
  • Transfer the nuts along with ⅛ teaspoon salt to the small bowl of a food processor, and grind until the cashew butter is smooth and creamy. Optionally, you could add up to 2 teaspoons of a neutral oil like avocado to facilitate processing, but it’s not necessary. Add more salt to taste if needed.

Notes

This recipe makes about 1 cup of cashew butter, which stores best chilled in an airtight container. If the chilled cashew butter is difficult to spread, set it out on the counter for a few minutes before you need it and it will become easier to use.
