Rice with Spinach, Carrots, and Pistachios—Create Your Own Bowls

Ingredients
3cupsprepared rice, reheated if necessary
2cupsbaby spinach
2carrots, shredded
¼cuproasted pistachios, shelled and chopped
2teaspoonsextra virgin olive oil
Salt and pepper to taste
Directions
Assemble each bowl individually. Add ¾ cup of rice to each bowl. Fold in ½ cup baby spinach, shredded carrots, and about a tablespoon of chopped pistachios. Top with ½ teaspoon olive oil, and salt and pepper to taste.
Serve with a protein of your choice.
