Rice with Spinach, Carrots, and Pistachios—Create Your Own Bowls

This uncomplicated dish was developed to pull together quickly on a busy weeknight. It's almost effortless to prepare, and there's no intense clean-up after dinner.

Ingredients

  • 3 cups prepared rice, reheated if necessary
  • 2 cups baby spinach
  • 2 carrots, shredded
  • ¼ cup roasted pistachios, shelled and chopped
  • 2 teaspoons extra virgin olive oil
  • Salt and pepper to taste

Directions

  • Assemble each bowl individually. Add ¾ cup of rice to each bowl. Fold in ½ cup baby spinach, shredded carrots, and about a tablespoon of chopped pistachios. Top with ½ teaspoon olive oil, and salt and pepper to taste.
  • Serve with a protein of your choice.
